100% Pinot Noir and Grand Cru grapes. This is an outstanding expression of Blanc de Noir, textured and expressive. You could easily get the apple crumble and lemon tart with strawberries, madarin peel and white peach with medium length. Definitely worth a HKD500 price range, paired with cooked baked salmon or sauced cod fish.

Paul Bara 一直是大家揭開各大香檳品牌後發現的名字,”the Club Tresors” 28個成員最可靠出色的酒莊。Paul Bara 位於香檳區Bouzy區,擁有11畝葡萄園,當中以Pinot Noir 葡萄最為出眾,出品的香檳Pinot Noir 都較高比例。Comtesse Marie de France 可說是Paul Bara 最高質素的出品,每次只產約6000支。只在優秀年份出產(2002、2004後暫時沒有新年分推出市面) ,以Pinot Noir 葡萄100% 而且全屬香檳區Grand Cru 級葡萄,把Blanc de Noir 演繹得淋漓盡致,容易找到蘋果蓉、檸檬撻、草莓、柑果皮、白桃的味道。如果能在港幣500左右找到合格有餘,最合適配搭該會是脂肪較多的魚類,焗三文魚或連濃郁醬汁的鱈魚都可是美好配搭。
